Did you clear cache (& data) from the phone app?
Settings -> Apps & notifications->phone->storage
Keyboard
In settings do a search for keyboard or goto languages & input
Tap on On-screen keyboard
Tap on Gboard.
You will land in settings. (keyboard settings)
Tap preferences and you will find keyboard height.
